Vicky’s date and walnut loaf

This simple and delicious cake has an added boozy suggestion!

Vicky's date and walnut cake

Ingredients

  • 350g dates, chopped
  • 1 mug of black tea
  • 100g walnuts, chopped
  • 1 egg
  • 175g self-raising flower

Method

  • Soak dates in black tea overnight.
  • Mix walnuts, egg and flour together and add the soaked dates and tea.
  • Bake in oven at 180ºc, gas mark 4 for 1 hour.

 

Variations

  • Substitute flour for almond flour/ground almonds, or half flour and half almond.
  • Adding a glug of amaretto or brandy for a Christmas version.
